Milieu Brunswick East
Milieu Brunswick East is a boutique apartment development shaped around the concept of Homes for Hospitality — a design ethos celebrating sociability, cooking, and connection. The project centres the act of hosting through generous spatial planning, robust materiality, and an emphasis on light, community, and adaptability.

The development marks a significant milestone as the first multi-residential project to achieve Merri-bek Council’s Design Excellence Scorecard, exceeding leading standards in sustainability, accessibility, and community contribution — including operating using 100% renewable energy.

Milieu Brunswick East places social connection, cooking, and ritual at the centre of inner-urban living. Working with Milieu and Fieldwork from the project's inception, Foolscap developed the Homes for Hospitality narrative; carrying this concept through to development's display suite and the building’s final delivery.
Each of the 44 apartments is planned around a generous, functionally-rich kitchen anchoring the living and dining zones. Surfaces are durable and easy to maintain, and island benches maximise preparation space.
A custom polished-steel ‘chef’s mirror’ reflects the cooktop to the living area, connecting host and guest and elevating everyday ritual.



Apartments benefit from natural ventilation and daylight introduced through a central void and external walkways. Oversized terraces, extending up to 94m², expand living spaces outdoors and enhance the sense of openness.
Materiality is robust and tactile, referencing the site’s industrial history through terracotta, textured concrete, timber, and stone. Bedrooms use soft, warm finishes, while bathrooms focus on colour, tactility, and practicality. Subtle hospitality cues include neatly concealed bars and integrated lighting that strengthens mood and usability.
At the precinct scale, a communal rooftop reinforces connection between residents, and a dedicated social tenancy for a not-for-profit organisation embeds community benefit within the development. Foolscap Studio also shaped the ground floor hospitality offering and refined the façade interface to support it.
